The team at Babyloved is always on the hunt for quick-wins when it comes to feeding our little ones. Here, mum blogger Emma Rawlinson shares her top three baby-led-weaning recipes for others to try.

Breakfast: Emma's dairy free banana bread

Banana bread never fails me for a quick weekend brekki and it's so easy to make too. Bananas and chia seeds are a good source of slow release energy for your little ones.  

 

Ingredients

Bread:

140g dairy-free butter – plus extra to grease the tin

140g caster sugar

2 large eggs beaten

140g self-raising flour

1 tsp baking powder

2 ripe bananas

1 tsp vanilla essence

1 tsp cinnamon

1 tbs chia seeds.

 

Topping:

Handful of walnuts

Honey (for one year olds and over)

 

Method:

·         Heat oven to 180C/160C fan/gas 4. Butter a 2lb loaf tin and line the base and sides with baking parchment.

·         Cream the butter and sugar until light and fluffy (super easy with a mixer), then slowly add the beaten eggs with a little of the flour. Fold in the remaining flour, baking powder, cinnamon and chia seeds. Mash the bananas and add the vanilla essence, finally fold this into the mixture.

·         Pour this evenly into the tin and bake for about 30 mins until a skewer comes out clean. If it is browning too quickly, cover with foil. Cool in the tin for 10 mins, then remove to a wire rack.

·         For babies perhaps add a little spread of almond butter to the top. For toddlers and over one’s drizzle honey over the top so it seeps through and makes it moist, add a little sprinkle of crushed walnuts for the toddlers.

Easy to handle lunch: Broccoli balls.

 

These are a great way of giving baby some new flavours to try while also making sure they chomp on some goodness. I used a Nutribullet to blend the ingredients together but you may prefer to use a blender. The great thing about these broccoli balls is you can serve to toddlers as part of a fuller meal too with additions such as a portion of sweetcorn, potato wedges or chicken pieces.

 

Ingredients

1 medium sweet potato

1 head of broccoli

1 clove of garlic

Handful of pistachio nuts

3-4 handfuls of breadcrumbs

1 tsp fresh or dried thyme (oregano is also fine)

1 egg

4 heaped tbsp of grated Parmesan cheese.

 

·         Heat oven to 200C and grease a baking tray with a little oil

·         Peel and dice sweet potato and cut broccoli into small florets

·         Place in a steamer along with peeled clove of garlic and steam for 10-15min. You can boil until soft as an alternative

·         Blend or bash pistachio nuts and set aside with one handful of breadcrumbs

·         Place all ingredients into the blender and bind together

·         Leave to cool slightly and roll into small balls coating in the pistachio nuts and breadcrumbs

·         Bake for 20-15 minutes until golden brown, turning after 15 minutes.

 

You may wish to separate the portions into two, one without seasoning for baby and one with salt, pepper and paprika so you can enjoy them too.

 

Snack: Baked oat cookies make little hand-held snack.

 

Cookies with limited sugar and ingredients you may have in the cupboards make this a really simple way of creating a snack for on-the-go-mums. I stole the recipe from eatingbirdfood.com

 

Ingredients

1 1/2 tbs chia seeds

60 ml Almond Breeze unsweetened vanilla almond milk

2 ripe bananas, mashed

100g old fashioned oats

25g cup unsweetened shredded coconut

40g chopped (de-stoned) dates

40g of dark chocolate chips

1 tbs creamy almond butter

 

Method:

·         Preheat oven to 180C (160C for fan)

·         In a small bowl, stir together the chia seeds and almond milk and let the mixture sit for about 10 minutes, or until the chia seeds have created a nice gel-like consistency.

·         Pour the chia seed gel into a medium sized mixing bowl and add in the mashed bananas, oats, coconut, almond butter and cinnamon until well combined.

·         Gently stir in the dates and chocolate chunks.

·         Scoop out dough (about 1-2 tablespoons worth) onto a baking stone or a greased cookie sheet and use a fork to press the dough down a little to make more of a cookie shape. You should get about 15 cookies.

·         Place in oven and bake for 17-20 minutes, or until the bottom of the cookies have browned a tiny bit.

·         Take them out, let cool and enjoy.
